So I’ve joined Leigh’s pre-Christmas Bloggest Loser challenge… there’s a good-sized group participating so here’s hoping we all manage at least some success!
I’m trying to get back into the routine of eating well at work. Cause we get lots of catering leftovers and lots of it is baaaaaaad sugary stuff that I struggle to ignore.
So this week I’ve been working on packing morning tea and lunch each day. And something that involves some effort in the preparation to make sure I actually eat it.
So I’ve been cutting up berries or apples and drowning them in low-fat passionfruit yoghurt as my snack:
For lunch yesterday I had brown basmati rice with tuna – my lazy lunch that’s still good for me. Though I had the tuna with creamed corn so it was probably not that great. I usually have mustard tuna and some sweet corn or beans.
I never thought I’d eat beans.
Today’s lunch was a giganto sammich with ham, capsicum, cucumber, fetta, mushrooms and bagged greens. I need sammich making lessons cause most of the contents fell out as soon as I tried to put this in my mouth.
Anyone got any ideas for some easy but nommy but healthy lunch options?
