So I’ve joined Leigh’s pre-Christmas Bloggest Loser challenge… there’s a good-sized group participating so here’s hoping we all manage at least some success!

I’m trying to get back into the routine of eating well at work. Cause we get lots of catering leftovers and lots of it is baaaaaaad sugary stuff that I struggle to ignore.

So this week I’ve been working on packing morning tea and lunch each day. And something that involves some effort in the preparation to make sure I actually eat it.

So I’ve been cutting up berries or apples and drowning them in low-fat passionfruit yoghurt as my snack:

For lunch yesterday I had brown basmati rice with tuna – my lazy lunch that’s still good for me. Though I had the tuna with creamed corn so it was probably not that great. I usually have mustard tuna and some sweet corn or beans.

I never thought I’d eat beans.

Today’s lunch was a giganto sammich with ham, capsicum, cucumber, fetta, mushrooms and bagged greens. I need sammich making lessons cause most of the contents fell out as soon as I tried to put this in my mouth.

Anyone got any ideas for some easy but nommy but healthy lunch options?

  1. Lauz – you got some serious chunkage happening on that sanga, no wonder it fell out! I use a veg peeler for sandwich vegies (especially thing like cucumber and capsicum). Makes everything super thin then you can layer it properly, it stays together and makes every bite have everything in it which this anal mofo appreciates.

    I love food. Am watching what I eat lately too and have taken to downloading exercise videos and doing them at home. Yeah, I know I’m cool.

  2. Good work on the yummy eating! I have very similar things for breakfast, but I add all different types of fruit (kiwi, strawberry, banana and mango is an awesome combination) and along with the yoghurt I add a handful of uncooked oats, as well as some sunflower seeds and pepitas. Delicious!

    Maybe instead of bread, try a wrap? Or throw all of the ingredients into a chinese container, add some balsamic and pine nuts, and then some ramen or soba noodles with some chick peas or four bean mix. This salad is one of my favourites!

    Finally, find a healthy muffin recipe (something with wholemeal flour and lots of oats, nuts, seeds and berries, with yoghurt instead of butter) and freeze the finished products. When you get one out in the morning, it will be defrosted by the time you need it mid-morning or during the afternoon sugar drop:)

    This is just personal ideas! Do some internet research – the ideas are endless!

  5. Hahaha…how much is Bobby Brown? I quit my job and am a total bum and broke! But sounds tempting all the same!

    We should totally smash some Jane Fonda! Or at least go for walks about Enmore. I did Windsor Pilates today and am fucked from it!

    I have heaps of yum lunch ideas, and I heartily back up the wraps idea! Mountain bread is the bomb. Also I’ll jump in and answer that pepitas are pumpkin seeds and totally delish and so awesome in yoghurts. I also put them in most salads I eat, they’re so good for you and from a weight-loss perspective seeds are GREAT because our bodies have to work really hard to take them in and burn up calories doing so! So get them in wherever you can!

    I pump salads for lunch but need some carbs in them or I’m starving again an hour later. Half a cup of brown rice in a salad does wonders, or pasta, and as Adele said beans. I fucking love beans. I was having kidney beans as a snack today, just eating them like nuts, and I almost came in my pants.

  6. Hahahaha, Ash has the right idea – beans really are genius food. Since becoming vegetarian, my selection of beans/chick peas is phenomenal.

    Pepitas are just pumpkin seeds. Super cheap, delicious, and really good for the energy boost. I am a big fan of different textures in my foods, so I love adding the crunch to the soft fruit.

In the summer I take a packet of round flat wholemeal or rye bread and leave it at work then each day I bring a lunch box with sliced turkey, grated carrot, sliced cucumber, lettuce, grated cheese etc. I also take a small container of relish or dressing to give it a bit of flavour. Just lay in on the bread at roll it up. easy.

    For the more exotic – add feta, sundried tomato, grilled peppers or eggplant from the deli.
